This beet carpaccio almost sounds like something for Christmas or something. However, we ate it on a weekday Just because I came across some inspiration in a cookbook and thought, even now it’s nice to give a little extra attention to lunch. After all, you have to make something of it yourself every day. As you know, I am very conscious about this.
So feel free to eat the beet carpaccio during a weekday for lunch, or serve it as a starter during a dinner party. And it is also a tip for Christmas dinner. It’s not that powerful, so that’s nice too…

How do you make beetroot carpaccio?
Ingredients for 2 people:
- 2 raw, cleaned beets
- 4 fresh carrots
- 1 shallot
- 2 boiled eggs
- 100 grams of blue cheese
- 2 handfuls of roasted pips and seeds
- 2 teaspoons of balsamic vinegar
- 2 tablespoons of olive oil
- salt and pepper to taste
Preparation:
If you want a little less bite, you can briefly blanch or steam the beets and carrots. Not too long, because then the effect is gone and you can no longer cut thin slices. After that it is mainly cutting and making it beautiful.
Below I outline the order that I have followed:
- Thin slices of beets laid out in a circle
- Divide the shallots into rings
- Carrots cut into small slices and centered in the center
- Cheese and egg crumbled into small pieces and divided
- Prepare the dressing in a bowl by mixing everything together and drizzling over the salad
- Seeds and pits on top
I myself finished it with a garland of balsamic cream. That looks nice, but is not necessarily necessary.
